Nourish Me Sweet Potato Mac & Cheese

The magic ingredient in this recipe is the Nutritional Yeast - high protein and filled with B vitamins and gives this great flavour.

Don't get me wrong I love a pasta bake drizzled in cheese and sometimes that is what we do but I also try to give my boys a break from dairy especially Cheese, Milk and Yoghurt. While these are okay in small amounts they are highly mucous forming and highly inflammatory in large amounts.

If your kids are under the weather or have colds, flu's or sniffles it's great to make a recipe that tastes cheesy and satisfying but contains no cheese. Not so easy with pasta dishes! Until this one!

Ingredients

  •  Gluten Free Macaroni ( I use passion pasta brown rice macaroni)
  •  2 organic sweet potatoes
  •  2 cups almond milk - make your own!!  recipe here 
  •  1 tsp organic wholegrain mustard
  •  2 cloves garlic
  •  1 tbsp nutritional yeast
  •  juice half a lemon
  •  1 tbs tamari
  •  1tsp himalayan sea salt
  •  1 tsp dried chilli flakes
  •  1 tbs extra virgin olive oil

Directions

  1. Preheat oven to 180 degrees.
  2. Chop up sweet potatoes into cubes and put on coconut oil lined tray for baking - bake for 35/40 mins turning at 15/20 minutes
  3. Boil pasta and cook. Drain and place back in pot
  4. In a bowl combine lemon juice, mustard, garlic, nutritional yeast, chilli flakes, olive oil, salt and pepper. Set aside
  5. Remove sweet potatoes from the oven (leave oven on!!) add to bowl with all the seasonings and almond milk. Mash well combining all ingredients.
  6. Add Macaroni to bowl and fold all ingredients together
  7. Place in casserole dish and put in oven for 10 minutes until golden.
