This is a super simple easy dinner for kids and makes a great finger food or lunchbox snack

Did you know ‘Big M’ hash browns are made up of close to equal parts dehydrated potato and equal parts canola, soybean and hydrogenated soybean oil 

It’s NOT easier to get the fake ones.  It’s easier to make them yourself!  It will be done in less time than it takes you to drive through you know where

This is my easy go-to dinner when I have zero time and I need a quick finger food dinner. 

These hashies are super delicious and easy and take just minutes to make. 

Ingredients

  •  1 large sweet potato
  •  1/2 tsp Himalayan salt
  •  2 organic eggs
  •  1/2 tsp pepper
  •  1/4 small red onion
  •  1 small broccoli head (optional)
  •  1/4 block organic feta cheese
  •  1/2 cup organic spelt flour (almond flour works too!)
  •  1 tsp organic cinnamon
  •  Fresh herbs of your choice (I love parsley & Rosemary)
  •  Olive Oil for frying

Directions

  1. Grate sweet potato (leave skins on!)
  2. Add remaining ingredients finely chopped and combine with a fork adding eggs last
  3. Fry over hot heat in Oil until crispy and crunchy!

    Dip in guac, sour cream or yoghurt!  These are brilliant topped with MAGIC SPRINKLES!
