Growing up I used to feel highly embarrassed about the way my family was different especially about food. We didn't eat processed foods at all, ate mainly from the garden and only MY mum would ask if we would like some sunflower seeds to snack on and then pull out an actual sunflower and ask us to start shelling them!!!!! Holy moly.
Kind of hilarious now isn't it and now I am older I truly appreciate all these quirky eating habits and now I am a mum I have learnt so much about how to teach my children about mindful eating and to create good habits with food.
These photos are the actual sunflowers from my mums garden. How can you not be happy looking at a sunflower? They are the flower of happiness. This is the sunflower that my mum asked me start shelling last time I visited!
This morning I was trying to think of what I would cook today and it came to me - SUNFLOWER BREAD! I want more happiness in my life today and this is the perfect solution.
I actually think this may be my favourite recipe I have created. High protein, sweet, delicious, nourishing & sustaining. Brilliant for kids breakfasts, lunches or snacks. Great for adults too!
Ingredients
- 200 g organic australian sunflower seeds (try to avoid any that are from china as they are highly toxic)
- 30 grams pumpkin seeds
- 12 medjool dates
- 1.5 cups or organic wholemeal spelt flour
- 3 ripe bananas
- 2 tablespoons of roasted almond butter - can use tahini if nut free or leave it out altogether.
- juice of half a lemon
- 1 tsp bicarb soda (aluminium free)
- 2tsp cinnamon
- 6 organic eggs
Directions
- Blend sunflower & pumpkin seeds to make a sunflower meal
- Add dates & banana and blend to make a paste
- Add remaining ingredients and blend well
- Put in lined tin and cook for approx 40 - 50 minutes until skewer inserted in middle and it comes out clean
- Serve warm with fresh butter or chia jam
