These bread rolls are delicious, light and fluffy and filled with beautiful nourishing ingredients. They don't have the same texture as normal bread but they go perfectly with soup and are delicious with some Chia Jam or Chocolate Breakfast spread.
They make the perfect addition to school lunches and are nut free and can be made gluten free.

Ingredients
60 g of ground Psyllium husks (buy these from health food shop or health food section of supermarket - if buying the husks grind them yourself)
30 g Flaxeeds/Linseeds
25 g Sesame seeds plus extra for sprinkling
30 g Chia seeds
30 g Pumpkin seeds
20 g Desiccated coconut
80 g Coconut flour OR 120 g organic spelt flour
30 g Coconut Sugar
2 Tbs Coconut oil
1 tsp sea salt
3 large organic eggs
3 - 4 tsp baking powder
400 g filtered water
Directions
- Preheat oven to 200 degrees C
- Grind up Psyllium husks to form fine flour. If using TM Grind 1 minute speed 10
- Add all dry ingredients except baking powder and grind to fine flour. If using TM speed 6 -7 for 10 seconds
- If using coconut flour you need to work very quickly with the next step as coconut flour is temperamental! Add all remaining ingredients and mix very quickly. TM 15 seconds speed 7
- If mix looks too dry add a little more water. Coconut flour absorbs alot of water so it depends which brand you are using. Mix should be a bit sticky and not too dry.
- Knead for 2 minutes using TM knead function or by hand for 3 minutes
- Shape into balls and roll in sesame seeds
- Place on a paper lined tray and bake in the oven for 30 - 35 minutes
- Allow to cool on wire rack before cutting and enjoy!
