Nourish Me Lemon & Coconut Bread

I've always felt a bit different to other mums for not giving my kids many of the things that other mums do. I'm not sure why but bread has never entered into our diets except for the rare occasion when we might be at a cafe or out and about. Actually in the interest of full disclosure we did pass Bunnings the other day and to my total surprise my boys asked if we could stop in for "sausage in bread" (note to self - check with Dad what he is feeding them in secret on weekend Bunnings trips)

You may be shocked to know that in almost 4 years I have never given my boys a sandwich!

I think when I learnt about ingredients I was always pretty surprised about what most bread actually contain. Even when I found good quality bread I started to learn that the way wheat has been grown and harvested since the start of the century has changed dramatically and the wheat we consume now hardly resembles traditional wheat and is highly nutrient deficient.

Wheat contains some appetite stimulants now that can actually make you hungry! This is why sometimes you eat it and you want more and more - it's very addictive and it comes with every dish you ever order. I know that I can't help but eat it if I order eggs in a cafe - it screams eat me eat me - so I do and then sometimes wish I hadn't.

Even gluten free bread tends to contain stabilisers and fillers that I have never been entirely comfortable with.  I still eat it occasionally if I'm out but have never bought it for home as I always felt it was an empty meal filled with stuff that make you feel full in the short term but unsatisfied shortly after it.

This bread is different - it's high in protein and filled with nourishing ingredients. I really enjoyed it but if you are used to supermarket bought bread - you may not. It's a great bread for kids as it's filled with essential fats for brain function, it stabilises blood sugar and I think it's rather lovely. My boys had it today with some raw honey on it and some almond butter.  Be sure to let me know your thoughts!

Ingredients

  •  Small handful of Almonds, Sunflower Seeds & Raw Cashews
  •  2 tsp Chia Seeds
  •  Zest & Juice of one lemon
  •  1/2 Cup of organic desiccated coconut
  •  1/2 cup of organic coconut flour
  •  1 cup of organic natural plain yoghurt ( I use Paris Creek)
  •  3 organic eggs
  •  1 tsp or ground cardamon
  •  1 tsp organic cinnamon
  •  1/2 tsp organic vanilla extract
  •  1/4 cup organic maple syrup (use a little more if you like it sweeter)
  •  1 tsp aluminium free bicarb soda
  •  Pinch of Himalayan sea salt

Directions

Grind nuts to form a flour like consistency

Add coconut flour, desiccated coconut, lemon zest, cinnamon & cardamon and combine

Add eggs and combine

Add yoghurt & maple syrup

Add salt, vanilla and bicarb & lemon juice and combine well.

Put into lined bread tin and cook for 35 minutes at 180 degrees until golden on top.

This is delicious with toasted Roasted Almond Butter

Note - Coconut Flour can be very temperamental to work with (much like my 3 year olds)  and does not like to be over mixed or to sit for too long (again much like my 3 year olds). It can do weird things (yep)  so work quickly when making this bread. Have your bread tin lined ready to go when you make this so you can put straight into a hot oven when it's ready.
