Isn't nature the best? I've always loved lavender. It used to grow wild near out house along with freesia's and every spring the most incredible scent would fill the air on those bike rides to school.
I take my boys lavender hunting… we walk along the streets looking for lavender that grows wild or at least pokes out over peoples fences. We met a lovely greek lady up the road from our house who spotted us one day and now every time we pass she runs out with her scissors and cuts a small bunch for me and one for each of my boys.
My little boy came up with this idea on one of our walks..'What about lavender lemonade mummy??" Yes!! I replied - and I think it's beautiful. I hope you like it. It's a beautiful recipe to make with your kids and also to make lavender ice blocks to freeze for smoothies and juices.
Lavender is such a great reminder to me that everything is going to be alright - even on those days you don't think it will..
Ingredients
- 1 cup organic raw honey
- 1 tbs dried culinary organic lavender OR 1/2 cup fresh lavender blossoms crushed
- 1 cup of fresh organic lemon juice (strained)
- 1tsp macqui powder - this is a powder made from a fruit which is considered the highest antioxidant content of any berry. (I used Loving Earth brand)
- Ice
- 5 cups of filtered water
Directions
Place 2.5 cups of water in medium saucepan and bring to boil.
Stir in honey until dissolved and remove from heat
Add the lavender to the honey water, cover with lid and let steep for 20 minutes - 6 hours (depending on how strong you like it) I left for 3 hours and it was pretty strong.
Strain mixture and discard the lavender
Add lemon juice and macqui powder stir and add remaining water
Refrigerate until cold and then pour into ice filled glasses[/directions]
