I call this iron woman cake because this is the cake I make when I need an extra boost!
Allow me to introduce you to Molasses - a massively under used sweetener.
Molasses is a thick syrup produced when the sugar cane plant is processed to make refined sugar for mass consumption. The toxic and unhealthy refined sugar becomes destined for our supermarket shelves as white sugar, the highly nutritious molasses - which contains all the minerals and nutrients absorbed by the plant is often discarded. (Isn't this crazy??)
Blackstrap molasses, the highest and most nutritious grade of molasses contains high amounts of minerals and is rich in iron. This would be my sweetener of choice if I am making a sweet cake and I want an extra mineral kick.
If you are going to use molasses choose an organic and unsulfered version as anything else is really a poor substitute and I would rather use another sweetener like rapadura or coconut sugar if you can't use good quality molasses.
Molasses can also have a slight laxative effect so can sometimes be used for constipation and although I do feed this cake to my kids and they LOVE it - I would caution it's use for children under 3 years old.
It's rich in calcium and magnesium and contains lots of trace minerals. Although this cake looks like a chocolate cake - it does not taste like one. This cake is an unusual, earthy and beautiful flavour but we really love it and hope you enjoy it too. Alisa
Ingredients
- 2 cups organic wholemeal wheat or wholemeal spelt flour (For a GF version use 1 cup of coconut or GF flour)
- 3 tbs magic seed mix
- 1 inch fresh ginger grated
- 3 organic pastured eggs at room temp
- 1 + 1/3 cups organic blackstrap molasses (unsulfured)
- 1 tsp organic vanilla extract
- 1/3 cup olive oil (macadamia oil works too)
- 2 tsp aluminium free baking powder
- 1 tsp baking soda
- 3/4 cup hot water
- pinch salt
Directions
- Preheat oven to 190 degrees celcius and line cake tin
- Add dry ingredients together including ground magic seed mix & grated ginger
- In a separate bowl add all wet ingredients except molasses.
- Add molasses to wet ingredients. They won't stir together well but you just want them to be together.
- Add wet and dry ingredients together and blend quickly or combine quickly. It will be a sticky and messy job - this is normal!
- Place mix in cake tin and bake for 30 - 35 minutes until skewer comes out clean
- Allow to cool on wire rack and dust with coconut or icing sugar and enjoy
