Kids coughing everywhere I look! Hello winter my old friend... Jelly drops are such a nice simple way to soothe. The gelatin is super nourishing for the gut and the lemon and honey have beautiful antibacterial properties.

I made these for my boys when one them picked up a cough from school. They are a regular in my house for winter. Super easy and soothing for the throat and filled with vitamin C.

I'm very fussy about the honey I use. So much store bought honey is poor quality and originates from China.  I absolutely love this honey which you can pick up from Woolies because it's from a from an organic farm in Tasmania AND packaged in glass! #plasticfreezone It tastes unlike other honey and is unique and delicious in flavour.

This was my grandmothers favourite honey and when she would come out and visit she would buy jars of this and take it back with her. The taste reminds me of my childhood and it is just beautiful!

Ingredients

  •  125 ml squeezed fresh lemon juice
  •  70g organic honey (I adore the real leatherwood organic Tasmanian honey which comes in glass and found in woolies - (pic and bottom of page)
  •  15g organic grass fed gelatin

 

Directions

  1. THERMOMIX - pour lemon juice and sprinkle gelatine carefully on top allowing to fully bloom and soak into liquid
  2. Add honey
  3. Mix 5 minutes on speed 2 at 50 degrees.
  4. STOVE - pour lemon juice into saucepan and sprinkle with gelatine as described above allowing it to bloom and soak into liquid
  5. Add honey and stir constantly over gentle heat until honey and gelatin fully dissolved
  6. Pour into silicone moulds and allow to set overnight
  7. Pop out of moulds and place in airtight glass container and keep in the fridge!
  8. Try not to eat them all in one sitting (or do) Either or.

VARIATIONS: I've also made these with fresh squeezed orange juice, honey, a knob of turmeric and a knob of ginger. They are a little spicy but my boys love them and they are a regular for us in winter! I think these would also work great with grapefruit too!
