Who doesn't like chocolate muffins? I am happy for my children to eat these for breakfast! Yes breakfast!!
They are high in protein, contain lots of nourishing ingredients and are delicious. We made muffins and a small cake out of this recipe and before I could take a decent photo my twins had eaten over half of them!
They are sugar free and can easily be made for lunch boxes or for snacks on the go! Okay ready to get started?? Here is what you need!
Ingredients
- 1 cup of wholemeal organic spelt flour
- 1/2 grated zucchini
- 4 - 5 organic eggs
- 2 tablespoons of organic sunflower seeds
- 1 very ripe organic banana
- 15 large medjool dates
- 1/2 cup of organic raw cocao powder (not to be confused with cocoa powder - that is a chemical cocktail)
- 1/2 cup of macadamia oil (organic unrefined coconut oil would work here too to make it nut free for school lunches)
- 1/2 cup honey ( I use raw or manuka) coconut sugar or rapadura works too
- 1 large tea spoon of aluminium free bicarb soda
- 1/2 teaspoon or himalayan sea salt
Directions
- Grate zucchini - set aside
- Mix dates, sunflower seeds and banana in high speed blender or thermomix until it forms a paste
- Add everything else and blend!
- Cook in oven for approx 45 - 50 minutes at 180 degrees. Might need less time for muffins. Check they are ready by inserting a skewer and making sure it comes out dry and clean.
