Okay so my husband loves a good BBQ and I don't want my boys filling up on processed sasssages and burgers so I've come up with this recipe which is absolutely delicious. These burgers or patties are sweet and light and perfect finger food for kids - not to mention filled with nourishing gorgeous ingredients. They are yummy hot or cold and can be served with a beautiful salad or some yoghurt or tomato sauce to dip. I am going to try and freeze a batch of these to pull out too and can easily be made nut free for lunches etc.
Beetroot is such an AMAZING food - filled with soluble fibre which can help lower cholesterol levels. It's low in calories but high in antioxidants a wonderful blood tonic and very good for those of us women who are always tired need extra iron. I hope you enjoy this recipe. Ingredients
- 4 Organic Beetroot
- 1 organic small sweet Potato
- 2 organic eggs
- 1/2 cup of unbleached organic spelt flour
- 2 gloves garlic
- 1/2 onion
- 1 cup of brown rice
- large handful or almonds/sunflower seeds/raw cashews
- Spices - 2 TBS Moroccan spices, 1 TBS cinnamon, dash cloves, star anise, paprika, cumin & Thyme/ chilli to taste.
- Dash of good quality Sea Salt
Directions
- Boil brown rice ( I always use left over rice for this recipe)
- Ground up nuts so they are still chunky (this gives a nice crunch) Set aside
- Boil Beetroot and sweet potato in small amount of water until soft then blend up well including skins. Don't over blend though.. you don't want soup!!
- Saute onion and garlic and add spices
- Mix Beetroot 'Mince' with brown rice add eggs and flour and add spices. If too runny add more flour.
- Shape into patties - warning you will end up with very red hands!
- Cook on BBQ or in Pan with some coconut oil until crispy tops and enjoy!
