Growing up we had an open house policy every Sunday.

What that meant is that every Sunday it did not matter who you were or where you were from,  you were welcome in our home for lunch or dinner or both.

Mum would cook a big pot of soup and we never quite knew who would turn up and where the conversation would lead. Sometimes there would be people who we had not seen for months or years turn up and share their life stories with us.

Our home was rarely locked - it was always open and there was always enough for everyone.

The conversation was always interesting.

Sometimes my mum would make apple crumble. The smell would fill the house and we would have it with vanilla ice-cream and stewed fruit.

I make this one a little differently but the smell is still wonderful and it fills our house with happiness and warmth. I hope you like it. Alisa 

Ingredients

  •  3- 4 apples cored - pink lady's are my fave.
  •  10 medjool dates
  •  Small handful raw almonds
  •  Small handful of organic sunflower seeds
  •  Small handful of walnuts
  •  Small handful organic oats
  •  Small handful of desiccated coconut
  •  50 g organic butter
  •  2 tbs raw organic honey
  •  1 tsp vanilla extract
  •  1tsp cinnamon
  •  pinch of salt
  •  ** For a Gluten Free version replace oats with a handful of mixed brown rice & millet flakes! Super yummy!)
  •  ** For a nut free version leave out almonds & walnuts and replace with a mix of  sunflower,  pumpkin seeds & chia seeds
  • I know handfuls don't give you an exact measurement but that is just how I cook! I would equate that a small handful is roughly about 25 g. Although it might be 20 or it might be 30 and it usually turns out just fine (give or take!) 

Directions

Apple mix - Combine apples, 4 dates & 1/2 tsp cinnamon and pulse until chopped finely. You don't want soup though!  I leave apple skins on as you don't notice them and this retains the mineral content.  Place into a ceramic cooking dish

Crumble mix - place nuts, seeds, oats and remaining dates into food processor or thermomix and chop until crumbly and chunky

Add coconut, vanilla, butter, honey, salt  & remaining cinnamon and pulse again. Don't over process as you still want it a bit chunky and crumbly but enough that it looks like a nice crumble

Place crumble on top of apple mix and cook at 180 degrees for 20 - 30 mins until golden and crunchy on top.
